Instructions

Ingredients

  • 1 sweet potato, 400 g
  • 100 g rolled oats

  • 1 banana, large
  • 1 tbsp. agave syrup
  • 1 teaspoon cinnamon, a
  • pinch of salt
  • handful of almonds
  • 2 tsp. peanut butter

Instructions

  • Peel the sweet potato, cut into little cubes and cook for 5 minutes until soft.
  • While the potato is cooking, mash half of the banana and cut the second half into thin slices.
  • Combine rolled oats, plant milk, mashed banana, agave syrup, cinnamon and salt in a bowl.
  • When the sweet potato is cooked, remove the water, add back into the pot and mash until very smooth.
  • Add in the remaining ingredients and bring to a simmer. 
  • Let simmer for 5-10 minutes until the oats are soft and the liquid is absorbed.
  • Pour into bowls and top with the remaining banana, crushed almonds and peanut butter. Enjoy!
